May Day Food


Happy May Day everyone! ^_^


If you are visiting Helsinki, remember to try Kebab place there. It has become one of my favorite fast food in Helsinki.^_^

They gave so much in one plate even look at it, you are full instantly.

My favorite place would be Eerikin Pippuri at Eerikinkatu 17. It is very near to Kamppi, central Helsinki. The price is very reasonable for mountain of food they giving...seriously you won't feel any space in your tummy after eating it. ^_^




That's my chicken with curry sauce and garlic potatoes and my bf took kebab with yogurt and french fries.

No Fuss Fruit Tart/ Cheese Tart

Thanks to Paris Pastry wonderful and always mouth watering baking skills, I want to try this recipe she got from Nigella Lawson. You should go to her blog, she's the best food blogger for pastry and bakery.




I couldn't find Lemon Curd in the jar so I have to made it myself. I am following this recipe from JoyOfBaking.com



Lemon Curd Recipe:

3 large eggs

3/4 cup (150 grams) granulated white sugar

1/3 cup (80 ml) fresh lemon juice (2-3 lemons) (do not use the bottled lemon juice)

4 tablespoons (56 grams) unsalted butter, at room temperature

1 tablespoon (4 grams) finely shredded lemon zest


Lemon Curd: In a stainless steel bowl placed over a saucepan of simmering water, whisk together the eggs, sugar, and lemon juice until blended. Cook, stirring constantly (to prevent it from curdling), until the mixture becomes thick (like sour cream or a hollandaise sauce) (160 degrees F or 71 degrees C). This will take approximately 10 minutes. Remove from heat and immediately pour through a fine strainer to remove any lumps. Cut the butter into small pieces and whisk into the mixture until the butter has melted. Add the lemon zest and let cool. The lemon curd will continue to thicken as it cools. Cover immediately (so a skin doesn't form) and refrigerate for up to a week.

Makes 1 1/2 cups (360 ml).




This is my own no fuss cheese tart. I don't use fruits here, it is always optional. It is so delicious! Try it!

Easter Dessert

I hope you have a great Easter. My stomach was pretty happy when it is full with good foods. ^_^ I've spend Easter with my bf's dad and he cook us lamb chop. Too bad I didn't get the picture because my stomach was growling with hunger so I couldn't think of anything. ^_^

The best part of it when he made us dessert. OMG! it is so good! It is very gourmet and lovely of each bites.

I see Red. I see Red Curry.

I went to Asian shop at Helsinki yesterday and buy some curry paste. I can do it myself from scratch but I am not at my hometown where if I forget one ingredient, I can get it the next store beside my mom probably would tell me "why makes life so difficult?" ...^-^

I am making red curry today based on this recipe from blog The Very Hungry Cook. She used massaman curry paste but it taste is still great with red curry, so no worries! Give it a try! ^_^ Visit her blog for step by step instruction.


This is not for health conscious...^_^ This is full of fat and deliciousness!








Ingredients:

chicken breast - 1 pound (boneless, skinless)

massaman curry paste - 3 tbspns

cardamom - 8

cinnamon - 2 sticks

star anise - 3

shallots - 6 small/3 large (peeled, quartered if large)

coconut milk - 2 cans

water - 1 cup

fish sauce - 1 and 1/2 tbsp

potatoes - 2 medium (peeled, quartered)

tamarind paste - 1/2 tbsp

brown sugar - 1 tbsp

peanuts - 3-4 tbsp (roasted, unsalted)

peanut/vegetable oil - 2 tbsp

Thai basil leaves - a handful, chopped.



Cut the chicken into bite sized pieces.

Add 1 tbsp of the oil and the massaman curry paste to the chicken. Mix well, and set aside to marinate.

Heat the remaining oil in a pan.

Once the oil is hot, fry the cinnamon, cardamom and star anise in it for 30 seconds.

Add the shallots and fry until golden-brown.

Then add the chicken, lower the flame and let it cook for 3-5 minutes.

Add coconut milk, fish sauce, water, potatoes, peanuts and half the basil.

Bring the mixture to a boil.

Cover and simmer for 30 minutes or until the potatoes are cooked through.

If needed, remove the lid and cook until the curry reaches desired thickness.

Check seasoning.

Remove the pan from the flame.

Stir in the tamarind paste, brown sugar and remaining basil.

Serve hot with jasmine rice.

Waffles: A Perfect Breakfast

Hi guys! who like waffles? I do!! I had waffles with kiwi and I'm in clouds. It is easy, quick and delicious! ^_^ Think about how lovely it is to put chocolate chip.... I never tell you it is going to be healthy, is it? ^_^




I got the recipe from AllRecipes.com but I think it is pretty basic.


Ingredients

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
  2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

Fast Crafts : Ring

I have one ring that I am not fond of looking though it have my initial on it because looks tacky. So I put double side tape to the ring and from my crafts collections, butterfly.

Now I have temporary ring that to my liking. ^_^

you can put anything on it as well. Have fun with it!

Fast Crafts: Basket and Can Make Over

This is my first post on crafts. I could put it on my other blog but I think food, crafts and travels get along together.^_^

I like doing crafts and I am sure most of you like it too but sometime we tend to be discourage because most of "serious" crafters have professional equipments and it does look cute or professional in a way that we wanted and we cringe if we should buy what they are using.

I do have that moment... ^_^



This is my project for yesterday.




I am not showing what is in my make up but I got this small basket at recycle center and I pretty much bored with it so I just give it a "make over" by putting patterned cloth inside. It is great because if I get bored with it, I can change it again! ^_^ No sewing needed.





This is outside the basket. You can put anything. It is spring so I want to have spring feeling to it. Just cut some cards and paste it with double side tape and ta-da! new look! ^_^




A can with muffin liners flowers. It is simple and you can paste anything! ^_^ Of course if you are using colored muffin liners, it could look more kawaii (cute)

Ice Cream

I love this 2 ice cream at the moment. I am a chocolate lover but the older I get, I am more into fruity flavor or vanilla ice cream. Only in ice cream. I wish I have ice cream maker, probably it would be cool thing to have.


Who doesn't like ice cream?!! When you have sore throat, eat ice cream. When you feeling down, eat ice cream. When you finish dinner, eat ice cream. My life revolve with ice creams.




Me and my crazy make up eating Ben & Jerry Wich' ice-cream..haa.. nice.


Hmmm....... very creamy and refreshing!

Muffins again

I've made half a dozen of muffins today. It is the same recipes I used from the last post except I used dark chocolate. I love muffins. I really love muffins. Can't you tell? ^_^

How I love to smell the fresh baking muffins..




From recipes : Titli Niihan Busy Kicthen


2 cup flour

1 cup butter

1 cup sugar

2 tsp baking powder

1 tsp vanilla essence

½ tsp salt

2 eggs

½ cup milk

Filling of your choice


1. Mix butter, eggs and sugar until smooth

2. Mix flour, baking powder and salt

3. Mix 2 mixture and add half of the milk until it smooth.

4. Add another half of the milk and add fillings of your choice.

5. Bake 170c for 30 minutes. Enjoy!!
